Sorry you don’t get a picture (it’s why this post is late, too. I was going to try and get you a picture, but it just didn’t happen this weekend). However, as Sean said when I mentioned it “They taste great, but they just look like pancakes. They know what pancakes look like.” I think he has a point there, so I’m just putting it up without a picture. These actually look more like “normal” puffy pancakes than the other recipe I put up awhile back, as they’re a little thicker. They are moister and heavier, though, which was the point (for me). They’re a bit more substantial and flavorful. Oh, and it’s a good way to use up extra-ripe bananas. Personally, I get tired of banana bread and muffins sometimes, and this is at least a little different.

On that, you do want to use over-ripe bananas, since you want to mash them up really smooth. A few chunks are okay, but you don’t want tons of chunks, it would be kinda yuck. They may also take a little longer to cook to “flip-ability” than traditional pancakes since they’re pretty moist, but it isn’t too different. Just watch them like one always does with pancakes.

About buttermilk: I actually keep a powdered buttermilk on-hand and use that, and it works just as well as the normal stuff. Either will do, and I have no idea how these would turn out with normal milk instead. The flavor would certainly be different <shrug>.

Banana Pancakes

Ingredients:

  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 2 TBS Baking Stevia
  • 1/4 tsp salt
  • 1 cup buttermilk
  • 1 egg
  • 1/2 tsp vanilla
  • 2 tbs melted butter
  • 2 overripe bananas, mashed

Directions:

1. Mix your dry ingredients (flour, baking powder, Baking Stevia, salt) together in a small bowl.

2. Mix you wet ingredients (buttermilk, vanilla, egg, butter, bananas) together in a larger bowl.

3. Add dry ingredients to wet and mix vigorously.

4. Cook on a preheated skillet or griddle (med-high heat) using about 1/4 cup batter at  time. Cook until both sides are golden brown. Repeat with all batter. Feeds 2-3 hungry people (our little family of three polished these off and felt nicely full, and yes, #3 is a 2 yr old, but she ate more pancakes than Daddy, I think. She likes pancakes and bananas :D).
