This recipe makes cake … or cupcakes … or muffins (if you’re like me, and you like your muffins super sweet — if you aren’t, just use less stevia!). Just add whatever flavorings you’d like — I’ve done blueberries, cocoa powder, and orange zest, and they all came out delicious. They bake quickly, cool quickly, and are even good cold the next day. The day after next I can’t speak to, because none of these puppies have ever lasted that long. 🙂

This bread is good.  It’s always a relief to break past that quiet but obnoxious barrier between “good, all things considering” and “good” outright.  It’s like the best qualities of the banana bread and zucchini bread we used to have, and you don’t really notice it has no sugar, no grains, no dairy. banana bread slices

There aren’t a lot of cereal options when you’re eating breakfast gluten-free.  We ate Chex and Trix pretty regularly for a couple years, but once we found regular access to [amazon_link id="B003LPM9XM" target="_blank" container="" container_class="" ]Bob’s Red Mill gluten-free quick oats[/amazon_link], we got a lot more comfortable buying and using oats routinely.  Hence:  granola.
