maple syrup

I have Jocelyn to thank for this stuff — when I told her glycemic index appeared to be the biggest concern for foods making us sick, she pointed out agave nectar actually has a very low glycemic index.  First I tried just a little agave nectar, in some cookies … then a little more … then I made this “maple syrup” and poured it over bacon, which is the best way in the world to have bacon.

So, for those of you out there who can’t have something with as high a glycemic index as actual maple syrup, here’s my very simple substitute.  It’s very fast to make.  🙂

Low Glycemic Maple Syrup

Yield:  1/4 cup syrup

Ingredients:

  • 1/4 cup agave nectar
  • 1 tsp maple extract

Directions:

1.  Whisk ingredients together until coloration is even.  Done.  Enjoy!
