The funny part is that I like these pancakes even better than the gluten-free-but-not-paleo pancakes I’ve made in the past.  🙂  They’re easier to flip, thicker, and heartier, and the batter’s quicker and easier to make (as long as you have the ingredients and a food processor on hand).  Even my grandma Cathie liked these for brunch on Thanksgiving morning.  🙂 plantain pancakes and blueberry spread

These freezer pops are a very easy, basic, but really yummy dessert.  Just puree the ingredients, pour them in the molds, and freeze — done. pineapple pops

Some of you might remember GF fried chicken from many moons ago; the real difference between that recipe and this one, and in fact basically the point of this recipe, was that my sister could still eat it now that she’s on a paleo diet to manage her various new food intolerances.  But, she can have everything in this recipe, sauce included, so huzzah! almond-crusted chicken

So the idea for this sauce started when I wanted to recreate ketchup; but I very quickly decided ketchup was boring, and why not just make a decent barbecue sauce if I wanted something to dip my chicken or french fries in?  🙂 BBQ sauce

I got the original idea for this recipe from some amazing gluten-free lettuce wraps I had at P.F. Chang’s; but rather than try to duplicate that recipe, I wanted to make a version with cashew chicken instead.  🙂 wrap
